Trust Fund for a child?

Does anyone know how you go about setting up a trust fund for a new baby? I have been told that this method of saving can be tax efficient if the money is locked in till the child reaches 16 or 18?
 
Trusts are not generally used in Ireland for tax planning except in very large cases involving millions of euro. And even then, they are more trouble than they are worth.

Eagle Star and others have a child's savings plan which utilises your annual Gift Tax exemption limit. But it's not a trust fund.
