It's only really relevant if you're going directly from the airport to/from the stadium ... but in that case Stansted isn't too bad as you can hop off the Stansted Express train at Tottenham Hale and jump on the Victoria Line tube a few stops to Finsbury Park or Highbury & Islington stations
Otherwise it really depends on where you're staying which airport is more convenient.
