Seville - Ryanair keep changing flights

We had planned to go to Seville in mid November but hadnt booked flights only hotel as needed sign off from a doctor. We havent been away for a while and had Seville in our heads and I have heard November was a lovely time to go to Seville. We have always wanted to go there anyway.

Have looked at flights over last few weeks and they keep changing the times, days etc, looked again last night and yet again have changed them.
The outbound time doesnt really suit us as you get there very late at night. Anyone know why they keep doing this and any way we can find out what will be there final outbound flight ie. Saturday or Sunday. We have looked at Aer Lingus and flights are late arriving as well but are quite expensive.

We dont want to book and yet another change.

Failing that can anyone suggest anywhere else within Europe ideal around mid November. We have been to Valencia and Malaga as I know weather could be quite nice there as well.

Aer Lingus also fly to Seville , the flight is earlier in the day.
Ryanair also changed my flights recently to an unsuitable time . They are selling seats for a timetable that is not finalised
