Ryanair schedules. Early Morning or late evening flights.

Delays can be for many reasons, the main one is weather, either enroute or at the destination, next tends to be ATC, staffing or simply sector capacity.

A flight into the UK or near Europe is about 60/90 minutes flying.
Sun destinations tend to be 150 minutes or more.

All flight schedules tend to have a bit of padding.
But, any delays on the earlier flights can be difficult to make up if the plane is 2+ hours flying.

Best place to make up delays tends to be on the ground.

What is meant by "sun rotation"?

The flight to/from one of the usual sun destinations (Canaries etc)

Wasn't there some suggestion on AAM last year that Ryanair schedule more palatable e.g. lunchtime flight times and once almost fully booked, closer to the scheduled date, there is a time change on the flight?

Presumably it makes sense to the airlines or they wouldn't be doing it. Some people think late flights back give them an extra day in the sun !

For myself I like an 8 or 9 am flight out, anything up to 11 am, and hate an early return, prefer something after lunchtime as the last day seems to be hectic ............. Therefore I'll base my flights on my preferences, if I can. One of which is to avoid everywhere in July and August as much as possible. This year we moved our 'summer' holiday to March ! Plus a week in June and another one last minute in Sept .... Older age has it's benefits.

Very much the same myself. I have changed from the standard 2 weeks in July to now, a week in June and a week in Sept/Oct. I much prefer this, just travelling with a 10kg bag
