Hi , i am new on this site. My sister visits her daughter in Ireland three or four times each from London. Because of her age 78 years, full driving license there is problems with insurance etc,
My question is can she buy a cheap car in London, insure it and tax it in the UK and leave it in Ireland in between trips. Would be great if someone could shed some light on this.

There is a question on the proposal about where the car is normally kept. This would presumably be your stumbling block.
However,Enterprise don't have an age restriction on car hire,so could be an option.

Also bear in mind that UK and other foreign registered cars must be re-registered in Ireland if they stay after 12 months. This means getting Irish number plates, paying VRT, etc., in other words, hassle.

Might be simpler to buy a cheap car in Ireland, insure it in the daughter's name but with the mother named on the policy, or see if open driving insurance could be obtained.
