Our front door is PVC and came with a plastic protective coating covering it. The plastic should have been peeled off at the time, but it has been left for a few years and now seems impossible to remove. It comes off in tiny tiny pieces at a time.

Is there any solvent I could use to remove the plastic without ruining the door?

DO NOT use acetone. It most likely will bleach the PVC.

I would try IPA (alcohol) first on a small sample area.

I used acetone on woodgrain effect PVC to remove some spray foam and it was going well for a few min until I noticed that when I rubbed hard the plastic was turning white.

I washed it down and now i have to rub cooking oil to give it a shiny appearance and not look burnt

PVC has excellent chemical resistant properties but avoid cleaners that are abrasive as it is also very soft. Basically if the door is white you are laughing but if it has a wood-grain effect you might have problems.
Basically the glue on the back of the firm has cured and crystallised in the sun so it may be very hard to find a cleaner that will dissolve the solvent. The Sun light will also age the plastic film so that it looses its elasticity and becomes flaky.
