Luxury Family Sun Holiday in Europe

Looking to head away for a week at end of Aug with ms husssy and 2 year old monster!! As the night life will be quiet, we are looking for some luxury for the week. Ideally a one bedroom apartment as regards accomadation with activities to keep wee man happy. Final caveat, flight not too long.Any suggestions greatly appreciated,
