Currently in process of switching, letter of offer issued 16th March and the Salesperson is asking me to return the signed letter of offer asap. Solicitor is requesting deeds from current bank. A pack was sent to solicitor and I got sent a copy of letter of offer. Should I just sign my copy of letter of offer and send back to bank (don't have a drawdown date) or wait for the solicitor to tell me to come in and sign?

Acceptance is an essential requirement of any contract, as soon as you sign the contract and returned same you have entered contract with the other party (new bank). I would wait till your solicitor tells you to come in and sign in case there are any unusual contractual terms within the loan offer that he/she can advise on.
