My preference is to do a table in Word or Excel and copy the image.

A problem with images is that others can't copy/paste the data and a search engine will not be able to index the content. If possible a table from which the data can be extracted for these purposes is better. I don't know if copying and pasting directly from, say, Excel (not as an image) works but I suspect not. But the board metadata/tags for creating tables can be fiddly.

I appreciate the small disadvantages you mention, but I think that the first one is so much easier to read, that it outweighs the disadvantages.
