Experiences breaking straight out of fixed rate

I'm planning to do the multiple mortgage switches and have applied to several banks. As we don't have 6 months history of saving we are failing the stress tests for the higher rate variable rates and can only get accepted for the fixed rates.

I've read on here it should be fine so long as rates don't change to break out of a fixed rate straight away. Just wondering if anyone had experience with this, particularly for BOI?
 
for the last couple of years it has been maybe in the region of 100Eur fee per 100k. It changes on a daily basis so there is always a risk, but it is highly likely will maintain that over the near term at least
