Diversifying into sterling in case of euro collapse

I'm looking into converting 23k euro into sterling.
I've phoned Ulster Bank Newry & have to travel up there to open it but Barclays are telling me I can open a sterling account on-line.
Transferring some savings into another currency feels like the right thing to do given all the euro instability.
Has anyone opened accounts in sterling....what kind of timeframe to get it completed?
Any thoughts or comments appreciated.
