Choosing between Variable/Fixed/Tracker interest rate for 360K ICS mortgage

I have got an ICS mortgage approved for 360K for a new house. It is variable rate. I would be able to change it before the house is ready by November this year, if there is any other good option from the following options. Hope some one would help me . Options attached as picture bellow.
