Career opportunity with accommodation

I have a niece who will be doing her leaving cert next summer and while she doesn't know what she wants to do, she is determined that she does not want to go to college and wants to leave home....
She currently works part-time at weekends in a restaurant/bar and loves it. I myself did hotel management years ago, in the late 70's, and while training was paid very little but had 'bed and board' and a great time I might add.
Can anyone point me in the direction as to how and where to pursue this or training for bar management or training in cocktail making.
 
Looked at DIT site, don't know anything about those courses, but the fact that she does not want to go to college would put her off I think.
CERT site is not helpfull. I seem to remember there were courses available during the 'off season' for bar/waiter courses, in hotels that closed for the winter..... Anyone know if this is still the case, and who runs these. Are they all gone now with the arrival of the 'foreign nationals' in a lot of these jobs.
 
As far as I'm aware (from family members working in the hotel/bar industry), those 'courses' are gone by the wayside. It's not the arrival of the 'foreign nationals', as you put it, that caused the change, but the need for standardisation of training and qualifications.

Failte Ireland seems to have taken over as the main provider of training and their website is worth a look.
