If you're willing to keep the money salted away for 3-5 years, the An Post Savings Bonds and Savings Certs are worth a serious look.
I bought some of the three year savings bonds myself recently - 10% return tax free and government backed.
Apart from having to leave your money in for the time to get the full interest, the main concern is that inflation may rise, so that has to taken into account when making the decision, as with any other investment.
That said, there's a lot to be said for tax-free.
