Can anyone confirm whether you're supposed to use your hand brake between each turn while performing the 3-point turn in your driving test???

Yes...you are. At least you had to when I did mine.

Very hard to do one without the handbrake if you're to avoid rolling forwards/backwards.

And it's called a turn-about now - you can do as many reverses as you want.

My instructor told me that the use of the handbrake while driving was at your own discretion. This included turnabouts and when stopped in traffic. Obviously the hillstart would be a bit difficult without it! But if the car is at risk of rolling use it as you will fail if it does.
