Spanish contact (30) looking for best place to learn English during the summer

I've been contacted by the sister of a Spanish friend from years ago, she wants to come to Ireland to work on her English over the summer.

Ideally she would prefer a host family, but she is older than the typical Spanish student, she's 30. She was asking about finding a summer job here but I was able to warn her that that would be difficult.

Can anyone suggest the best way for her to be able to work on English. At her age might a short term au pair be a good idea (if such opportunities are available). Or is she better to enrol in a school? Where? I'm guessing this stuff is cheaper outside of Dublin.

I bet the Spanish embassy in Ireland would know where the Spanish come to learn English. That might be a good starting point.
