I was told that a few hundred Euro extra each month for someone on my salary wasn't that much and couldn't have caused the impact it did.

I want to reassure you that you're not on your own in your experiences with the Lower UB Appeals Panel. I'm afraid I have had similar experiences with the Oral Hearing and I've yet to hear the outcome of my Appeal. BDO themselves told me more than once on the phone that it was to be an 'informal chat' their exact words. Nothing could have been further from the experience I had.
First of all I'd suggest that you write a letter outlining your experiences to both The Central Bank (FAO Derville Rowland) and the Finance Committee if you haven't already. I wrote to the panel explaining how I felt after the hearing and received a letter from them this week that can only be described as a chastisement. If I wasn't so far along in the process I'd be pulling out immediately but I feel like I've got this far so I have to stick it out.
I understand you're tired but you have 6 months from the date of the Appeals Panel ruling to accept or decline the offer. The FSPO is due to publish the first tranche of tracker complaints this month. It would do you no harm to hold off until the complaints are published and then you can make an informed decision on whether to move to the FSPO or not.
Can you give us the figures?
I have made this argument as well.
If someone had a net pay of €2,000 a month and were overcharged €1,000 a month, they were deeply impacted.
If someone had a net pay of €5,000 a month and were overcharged €500 a month, they were not deeply impacted.
@Brendan Burgess and I know they do but BDO described it to me more than once as an 'informal chat' and I know that they said the same to other appellants.

Thanks. Is it the panels decision then if there's no queries or do they have to consult with UB first? And are they restricted in how much they award?@Denvir77 it depends. They will take about 6 weeks to write back to you after the Oral Hearing. It may not be their determination though as they may decide they still need more clarification on issues raised.
Thank you, unfortunately as a result of this debacle you are wealth of knowledge@Denvir77 yes it's the panel's decision and they don't have to consult first. They are restricted in the award amounts. Anything over the amount has to go to the bank for approval though.
