For a standard "off the shelf" Limited Company what is the minimum number of Directors you can have?
Does a Director necessarily have to have shares in the company in order to qualify/be listed as a Director of said company?

Technically there should be no such thing as an "off the shelf" company. The Companies Act 1999 was amended to do away with shelf companies. The reason shelf companies used to be incorporated is because it used to take to long to get them registered. Now it only takes company formation agents 3-5 working days to register a new company. I would be very wary about buying one of these types of companies.

Regardless of whether it is a Single Member Company limited by Shares or a Private Limited company by shares, you still need to have a minimum of 2 company directors.

No. A director is an individual responsible for the day to day running of the company, but a shareholder is someone who physically owns some (or all) of the company.
