Would anybody have any tips or recommendations for Carcassonne? We'll be staying in the old part. Thanks
 
On one of your days take the train to Narbonne for a lunch, stroll around and have a look at the indoor market. Also up near the train station you can get boat trips on the Canal du Midi.

Lots to see and do but a day trip to indoor market in Narbonne. le Halle's is must. I have linked the website of cafe their. Needs booked well in advance. All food from market and meat orders are wrapped by vendors and thrown over the people's heads to cafe owner. Even if you don't get a booking passing by their during lunch can be interesting to see it happen.
