we have been self employed for over 5 years.
Where is the best place to go for a mortgage, where they understand drawings/tax etc, from the point of view of being self-employed?

For example, our drawings are our take-home pay, the income tax has been paid separatly.

How can we convince them that we have no problem meeting the mortgage repayments, even though we have a low income?

You need a lender or broker who can read accounts so that they can add your drawings and the net profit together to give your total available income. As long as your bank statements are good (i.e. no referrals or rejected payments) and your tax is up to date you should not be discriminated against for being self employed.
