Vouchers purchased on their Irish website, since 2nd December 2019 are valid for 5 years. This is the law in Ireland.

Not Irish consumer law. If the sale takes place in the UK, then UK consumer law must apply. It even says it in the piece you copied.even if it's the gb site they are subject to Irish law
