A couple are married abroad in a Muslim Religious Marriage. They are resident in Ireland. Is the marriage valid in Ireland for tax purposes or are they regarded as single people under the Irish tax code?

Usually if the marriage is registered in the country where it took place and there is a certified translation of the certificate then that is good enough for most administrative purposes. Most countries including Islamic have civil registrations of religious ceremonies.
You can imagine the issues there could be a minefield of legal issues with religious only ceremonies with no civil certification process.
That said I see no reason if you have the relevant certificate why the marriage would not be recognized also for tax purposes. For a definitive answer in your case you would really need to contact the tax authorities and also ensure that your religious marriage has the necessary paperwork to support it.
