do you cook directly on them. I have one inthe end of a tray but cook on the metal rack above the tray

That's what I do. I've never cooked on it directly. Don't suppose it would be a problem tho. It looks like rubber, but it doesn't smell or anything.
 
We use them all the time for baking. Very easy to clean after especially pavlovas.
 
nothing beats a self cleaning oven . if you cook on the metal rack above doesnt that have to be cleaned too ? the metal rack cant be left inside for a self cleaning oven so entails more work i think
