Legally avoiding paying tax

I am a full time paye worker. I have been offered a part time contract, a few evenings and weeekend work! Basically I invoice the company for my fee but must look after the tax ect.

What legal mechanisms can I use to maximise the money I earn in this new contract without paying half in the paye system? I am open to setting up a seperate entity to facility this but don't wnat to do anything that the tax man would frown at?
 
you can either operate as a sole trader or a limited company.
This decision will be based on your own personal circumstance, the level of your turnover and various other things.
