Interest Only Mortgage on Section23

I've three Apts, one Section 23 with approx 290,000 I can offset. At the moment, I'm considering "pooling" the 3 mortgages which would total 627,000euro to one lender. I receive 2,900euro each month from my tenants. Is it a good idea to avail of an interest only option for a couple of years, thereby earning hopefully approx 10,000euro profit each year which I can offset against my S23.
