Insulating around Period Front Door - dublin city

Anyone able to recommend a company/handyman who would be good at looking at all the options to fill the gaps around my front door/door frame/old doors to reception rooms. These are way too nice to rip out but air gaps are everywhere and the result is a freezing hall/upstairs landing. The fact that I have the original doors in all the rooms (with some gaps given that there are over 100 yrs old) then means that this cold air gets into the reception rooms. I've tried those sticky insulation strips myself but they keep coming off.

I suppose I'm looking for general advice on insulation in an older house - I have new windows (which are excellent), attic is insulated and I dont want to use chimney balloons etc (ventilation is required in any house and worried about carbon monoxide etc). I'm willing to spend a few quid to get it right for next winter without having to keep heat on constantly- any recommendations appreciated.
