To be honest you haven't really got a snowball's chance in hell of obtaining a work permit. I don't mean to sound brutal but with the way the system now operates, you really have no chance of getting one.
6/7 years ago, it was realy just a formality, you applied and gave them a bit of spiel how you couldn't find an Irish/EU worker to fill the position and you sent in your application and bar some immigration problems with that person in the past, hey presto you got a permit. But now that has all changed particularly with the enlargement of the EU in May 2004. I know that Romania has now joined the EU but for the time being they are still being treated as non-EU as far as immigrant workers are concerned (unless the Romanian concerned is already in the country on an existing work permit).
There are only certain skilled categories where they will entertain a non Irish/EU national applying for a work permit; even then you have to provide evidence of how you tried to fill the position by advertising for a minimum of 3 months prior to your application. I would very much doubt that a position in a hotel would fall into an approved job category.
I dealt with the system for four years from 2000-2004 in my last job, and during that time, the rules got tighter and tighter and I can only imagine it is even tougher to get a work permit now.
