Hand luggage policies of different airlines

Anyone able to summarise and rank the policies of the most common carriers in and out of Ireland? Maybe add some tips e.g. distributing weight among people travelling together.

I flew to London recently with Aer Lingus and travelled very light but saw many others with more than one bag. It would have suited me to have had two bags.
