Good Value Restaurants west of the shannon

Can anyone recommend some good value restaurants west of the Shannon.
I am having some visitors soon and really don't know where to go - out of touch really in the past year or two.
Good value really is important, so it can be good simple food. Not too interested in the pretentious side of eating out.

They are travelling down from Dublin , probably via Roscommon town and down into Mayo. Counties Roscommon, Galway and Mayo will be their focus of interest....
