I did one a couple of years ago in IACT (it's on Stephen's Green and I've no affiliation). It was called a DTP Master and it covered Quark, Illustrator and Photoshop. There's 2 full days tuition in each application and exams and projects then after. I found it helpful as I was a complete novice at the time. Once you get the basics you'll pick up the rest by yourself.
