I took a quick look at the University of Limerick and also the Cork Institute of Technology websites. I could not see any but I think there must be some courses there to suit you. I would say that the best thing to do is to phone the colleges directly and ask to speak to somebody in the Schools of Science and they should be able to advise you towards something that might suit.
I don't know if you already have a qualification in science or any science based work experience. That could make a difference towards what courses you could apply for, particularly postgraduate diplomas.
