Advice please on savings account

I have been saving for years and getting paid into an ulster bank account?

would anyone have any advice where id earn the best intest at the moment or which bank to save with. dont need to touch it for 6 months at least? have about 40k saved

I know ulsterbank is not guaranteed by the Irish government so a little bit worried about that too.
