Can anyone suggest somewhere to go to for a week or so from 26th December 2018 (flying from Dublin) as a solo traveller, either to volunteer or for a holiday?

Two very different scenarios to be fair.

Holidays are expensive at that time of year. I would recommend Cape Town, Dubai, Abu Dhabi, or Qatar for a holiday.

They're all a bit far away for a week

Hardly; the Middle East is a seven hour (direct) flight away, and the departure/arrival times are pretty attractive.

The fact that there’s no time difference in South Africa makes it okay for a week in my view.

Can you suggest a travel company to go with?

I was checking the temperatures in Southern Spain over that period and the daytime temperatures were still in the low 20's. The Spanish Christmas stretches in to January.
Whether you want that is another thing though :)

I once flew Cork to Malaga for Christmas, was -16C in Cork and was 16C in Malaga...I flew out Christmas Eve or maybe the day before and the flight was full...
Its a nice place to relax for Christmas

lanzarrotte would be a good pick IMO , relatively affordable and weather still good this time of year relatively speaking

Ye guys should think about a holiday together ;)

We spent Christmas in Torremolinos for the past two years as we go there a few times a year anyway , The weather was fine , Shorts and t- shirts by day and a cardi or fleece by night , There is a beautiful walkway along the beach there that will take you up to Benalmedena , We stay in the Banjildillo area and it is quiet enough , That said if you like to go to have a nice meal or go for a few beers there is enough around , Flights to Malaga are short and the train takes you straight in , The Christmas atmosphere in Malaga which is only 15 minutes by train from Torrremolinos is spectacular , Lots of friendly Irish folk around getting away that time of year .
