Toulouse for a weekend

Has anyone been to Toulouse for a weekend (apart from the rugby!). Thinking of going there for a a few nights towards end of August and dont really know anyone who has been there for a holiday? We have been to many parts of France but not Toulouse. We are couple in mid 50s , like good food and wine!

Would be interested to hear any recommendations?

I only spent a few hours there on my way back from holiday in 2019, lots of homeless and unfortunately begging as you walk around.

But the architecture is fabulous (Old part) it's a typical southern French City but one jewel is the house/school were Fermat wrote his " little theory " that was only solved in the 1990s , despite Homer Simpson almost solving it in an episode.

Its dominated by Airbus and has been described as industrial, but the train is super efficient and its easy to visit for example Carcassonne which is worth the effort.

Hope this gives a little flavour.
 
thanks for that. Not sure. Yeah been to Carcassone many times and loved. Might go back to our 2nd choice Valencia, ...good to have choice!

Wife was there in October, daughter lived there for 3 months they all loved it except it was unseasonably hot even in late September early October
