I have flights booked for next week to fly into Dublin and back again the following week. Happy to suck up the cost of missing the first flight (I don't see any other options, no refund etc), but I thought ti check - do I need to do anything to ensure the return leg is still valid ?

I have used the return leg only a few times with Ryanair pre pandemic so unless something has changed I think you're OK.

btw - did you try changing it ? For €50 it could work out cheaper to move the outbound by a day or two.

Flight dates/times/routes can be changed up to 2.5 hours before the flight departure time (name changes can be changed up to 2 hours before the flight) via 'My Bookings' unless you have already checked in, in which case please contact one of our agents using our live chat.
You don't need to notify us if you are unable to travel and if you can’t use your outbound flight, you can still use your return flight.
