A person I know is working 30 hrs a week in a grocery shop. However his employer has stopped giving him payslips since the new year.

Before when he was getting payslips, but the hours were wrong often over stated, in such circumstances he got paid for the hours he worked, although the hours and the monetary figure on the payslips were higher.

Why would his employer inflate the figures on payslip ?

The basic figure, also changes. When for example he works 32 hours instead of 30.

The basic is stated as 32 hours on the payslip, should this not be 30 hours basic & 2 hours overtime ?
 
Overstating payslips means that he has a record of paying higher wages which will reduce the employers tax liability. defrauding the system
 
Another example of why our country is in the state it is.

Like the thread about reporting dole fraud, this employer should be reported to Revenue immediately.
