Want to cap unused hot supply to washing machine ....

ok it seems to have worked. I will actually be requiring 2 caps as I'll be removing the washing machine completely from this area.

Would be best to remove the two valves all together and then just fit caps to the two pipes, in lieu of the nuts that are there. Turn off your mains for the cold valve and hot water valve in the attic for the hot first but you probably know this all ready:p

Yes i'll be isolating the cold mains via the tap under the sink but as regards the hot feed when you say the valve in the attic do you mean the valve between the tank in the attic and the cold feed for the cylinder? I presume there has to be one there. I was hoping there'd be one between the hot line from the top of the tank down to the rest of the system but alas there is not. So i'll have to empty the cylinder?

The hot isolation could be in a number of places. Don't think there should be one from the top of the hot tank to allow for expansion. Trace back the pipe from the bottom of the hot water cylinder and find the valve on that. So long as that's shut off, the hot water will stop flowing (as it's the pressure from this feed line that drives hot water out the top of the tank.

I'll be plumbing up the washing machine in the new location. I'm going to be putting isolation valves on the qualpex lines. Do i need to put a new olive in the compression fitting or should the existing one do?
